It depends on the con.  Some cons have one or more staff members sleep
overnight in the art show.  Some just lock the doors.  Some just set
up motion sensors and very loud alarms.

It depends on whether the person is "missed" or not.

At a recent (non-furry) convention where I was working security, we
actually did have an attendee go missing for a period of about 12
hours.  A few hours into their disappearance, a friend/roommate
stopped by the Ops Office and asked for help in locating the missing
person.  We kept our eyes open just in case they should turn up. (And
yes, the person did turn up the next day.  They happened to fall
asleep overnight in another room)
